Chief Distiller Lee designed this spirit to make the ultimate Vodka (Finger) Lime Soda with no need for lime cordial or sugar syrup --- Just a Super refreshing light (but still 40% ABV), aromatic and super citrussy lime vodka with the perfect amount of finger lime pops.

We vapourise this vodka in our still and infuse it with with super fresh citrus botanicals hand picked from our farm. The star botanical of this is Kaffir lime FLOWERS which are an absolute nightmare to pick but elevate this vodkas aroma and flavour to absolutely heavenly.
You can see 4 hours of chief distiller Lee's work here picking Kaffir lime flowers... :) Our bee's get quite upset that we take all the flowers but they have loads of other things to feast on...
Vodka filled finger lime pops (Yes each vessicle contains 40% alcohol vodka) are magically suspended to create the worlds most mind bending & unique vodka. Each bottle takes us 18 months to create and each batch is just 54 bottles. The finger limes take 9 months to grow on our farm and then it takes us 9 months to c-a-r-e-f-u-l-l-y extract the caviar, deseed it, infuse it so that each pop converts to contain 40% alcohol and then to finally make the finished bottle masterpiece!
Since a VLS is a longer drink than GnT we have added extra 600 pops per bottle so you get the perfect amount per sip. Yes we do think of you - all of the time.

Our 2,000 Finger Lime trees have the best view in Australia! They can see all the way from the Hunter Valley to Woolongong and even the top of the Sydney Harbour Bridge on a clear day. Soon you will be able to visit our new distillery currently being built on the farm around a 2 acre lake :)

The pink finger limes are grown on our 80 acre farm at Kurrajong Heights. Chief distiller Lee planted 1,600 finger lime trees back in 2010 and has crawled around and under each and every one of the trees at least 70x since tending to their needs and ensuring they produce the most amazing fruit! It took a further 3 years of research and development to create this gin.

Each bottle takes 18 months to create - 9 months to grow and nurture the fruit and another 9 to gently and skillfully convert the caviar to contain 40% alcohol gin and retain their dark pink colour.
