The Beginning

Family owned and run

Our journey began back in 1998 making Lilli Pilli Jam and many other weird and wonderful Australian native foods.

Lee's first big success came from dropping a Wild Hibiscus Flower into a glass of bubbly - the ladies went mad for it and before he knew it Lee was exporting those little flowers all around the world and the Wild Hibiscus Flower Company was born.
This evolved into the world's most innovative cocktail garnish company featuring edible flowers including butterfly pea and Bulgarian rose. Lee's brothers Sam and Ben joined the company early on to help manage the growth. After 25 years, the products are distributed all around the world through the best gourmand retailers.

Our Wild Hibiscus Flowers were even served at Barrack Obama's inauguration ceremonies! Today we supply edible flowers to hundreds of distillers, brewers, wineries and tea providores.

About Lee

Lee also has plantations of hibiscus flowers in Malaysia where around 100 small lot farmers are employed. In central Thailand he has plantations of Butterfly Pea Flowers in 2019 his Thai company Siam Hibiscus Limited exported 220,000,000 hand picked blue flowers!

Apart from distilling Lee loves plants and lives on an 80 acre farm at Kurrajong Heights on the edge of the Blue Mountains. Here he has planted over 2,000 Finger lime trees of all different colours. He also grows all the native pepperberries, kaffir lime, tahitian lime, lemon myrtle and most of the other botanicals we use in our gin.
In 2023 we have started construction of our new distillery and factory up on the farm. It has been a lifelong dream to bring everything together and soon you will be able to visit and see everything we do from paddock to bottle!

There will be a cafe built out over our 2 acre lake filled with water lillies and 60 year old koi carp. You will be able to try all our gins on the deck and take a walk through the acres of mature camellia's and native food plants and maybe even a VIP buggy tour around the farm and up to our main finger lime orchard which has views from the Hunter Valley to Woolongong.

Our finger lime trees can even see the top of the Sydney Harbour Bridge on a clear day! And we would just love to share this with you soon.
